LET’S GET COOKING
1. Sieve the flours together into a stainless steel bowl. Make a small well in the centre of the flours and gradually whisk in the beer. Bring together until just combined then add the soda water, being careful not to over whisk it. Cover the batter with glad wrap and place into the refrigerator to chill.
2. When ready to cook your fish or seafood, preheat your oil and coat your product with a light dusting of plain flour. Shake off any excess. Once the oil is ready then bring out the batter and give a quick whisk. The reaction between the hot oil and the cold batter, plus the aeration added by the beer and soda water, will create a light, crunchy and flavourful batter.
