Freeze your mangoes slightly to make easier for cutting

1. Make the mango dressing by placing the mango cheeks, coriander and chili into a food processor and blending to a smooth puree.
2. Pour into a bowl, cover and refrigerate. Heat the oil in a large frying pan.
3. Add the prawns and the garlic and sauté for 3-4min.
4. Season with sea salt and cracked black pepper.
5. Place the prawns onto a bed of lettuce and then drizzle over the mango dressing and serve with a wedge of lime.
