Save time and purchase the cooked and peeled prawns

1. Pour the vinegar into a small saucepan and bring to a simmer. Add the finely sliced shallot and remove from heat and allow to cool.
2. In a small bowl place the watermelon, mint and the cooled pickled shallot with a little of the vinegar.
3. Carefully mix in the prawns and season with sea salt and cracked black pepper. Arrange the salad onto 2 plates evenly with the prawns on top then drizzle a little oil over the top.
4. Crumble on the feta cheese then garnish with the fresh chives.
