1. Heat the oils in a large frying pan or wok. Add the garlic, ginger and chili and fry for 2min or until aromatic.
2. Add the clams and stir through quickly then add the Shaoxing Wine and lime juice and cover the pan with a lid.
3. Cook for 2-3min or until the clams open. Remove the lid and toss through the spring onions and coriander. Serve on a bed of jasmine rice or green coral lettuce
