Have your squid cold and oil hot to get the coating crisp

INGREDIENTS
LET’S GET COOKING
1. Preheat a deep fryer to 1900C. Cut the squid tubes across the middle lengthways to expose the inside of the tube.
2. Score the inside in a crisscross pattern being sure not to cut into the tube too deep (no more than half way) In a clean container that has a secure fitted lid add the flours and seasonings and mix together.
3. Cut the squid into strip pieces and place into the flour.
4. Secure the lid and shake well to coat the squid.
5. Remove squid form the flour and place into the fryer in small batches.
6. Cook for 1-2min then removed from fryer.
7. Serve immediately with a pinch of sea salt, lemon slices and aioli.
