LET’S GET COOKING
1. Skaw the squid tubes lightly and place into a bowl. Add the oils, garlic, ginger, chili powder, fish sauce and kaffir lime leaf into the bowl and combine well.
2. Cover in plastic wrap and marinade for 1Hr. Thread the whole squid onto a skewer.
3. Heat up a well-oiled griddle pan or the char grill section of a BBQ. Place the squid into the pan or BBQ and cook for 1-2min each side.
4. Place the cooked skewers onto a serving board and dress with the fresh Coriander, squeeze of lime juice and a good sprinkle of Sea salt.
