1. Place the frozen raw prawns into a sink full of cold water and thaw. Drain well. Bring a large pot of water to the boil and add half the salt to it.
2. Fill the sink half full of water then add a good amount of ice and the remaining salt.
3. Once the salt has dissolved pour the raw prawns into the water and return to the boil.
4. The prawns will cook and float to the surface as they are cooked. Remove them with a slotted spoon and place straight into the icy water to stop the cooking process.
5. Once completely cooled drain from the water and serve on a platter with some cocktail sauce, ice and lemon wedges.
