LET’S GET COOKING
1. Place the shallots, garlic, ginger, chilies, salt, turmeric, curry powder, lemongrass, coriander and banana in a food processor.
2. Blend down to a fine paste. Place the paste into an oiled pan and begin to cook out the curry paste.
3. As the paste begins to thicken add the stock. Cook for 5min before adding the coconut cream.
4. Bring to the boil then add the snow peas and fish.
5. Cook for a further 5min or until the fish just begin to flake apart.
6. Serve on a bed of cooked jasmine rice.
