Use Goldband, Ruby or Crimson Snapper for the better taste

INGREDIENTS
LET’S GET COOKING
1. Preheat oven to 1800C. In a large bowl place the ginger, spring onion, garlic, chili, sesame oil, oyster sauce, fish sauce, lime juice and sugar and stir together until the sugar has dissolved.
2. Lay out some tin foil across a bench and place the fish in the center of the foil.
3. Roll the edges of the foil up to keep in the liquid marinade.
4. Make 3-4 incisions into the skin of the fish with a sharp knife then pour over the marinade.
5. Make sure to get inside the cavity of the fish as well as both sides.
6. Place another length of foil over the fish then wrapped the fish together securely.
7. Bake fish for 20-25min.

Unwrap the fish and garnish with the coriander and Fried Onion.

Serve whole and let the guests help themselves.
