Preheat oven to 1900C. In a small bowl pour in the breadcrumbs.
Add the parmesan cheese then add the olive and lemon juice and mix together to form a wet crumb mix similar to stuffing texture.
Place the Barramundi onto a greased baking tray.
Take the crumb mix and gently press onto the Barramundi fillets to make a crust approximately 5mm thick.
Place the tray into the oven and bake for 10-15min or until the crust has turned a golden brown color with and crunchy feel and the fish is white and plump.
Accompany this to a side of roasted vegetables, mashed potatoes or even a garden salad.
