Choose an organic Passatta for that extra rich tomato flavour

Heat a large pan with the olive oil and sauté the onions, garlic, chili and herbs for 3-4min.
Add the white wine to the pan and cook for 2min then add the Passatta and reduce for 30min on a low heat.
While sauce is reducing, drain the mussels and remove the beards from the mussels. When the sauce has thickened add the mussels and increase the heat back up.
Stir and cook the mussels until you begin to see them open. Remove from the heat and allow to rest for 1-2min.
Serve into serving bowls with the grilled crusty bread, a few leaves of dill and season.
