Open the bottom flap underneath the crab. Gently lift the carapace between the bottom shell and the top shell off the crab to expose the inside. Clean out the internals and remove the gills (small triangle segments). Quickly rinse out and pat dry. Crack the crab in half and remove the white meat inside. Crack open the claws and legs using a knife or hands to remove meat.

Preheat oven to 1600C.
Remove the meat from the crabs and place into a bowl (See picture opposite for the technique on picking a crab) Cut 4-5cm off the top of the cob loaf with a serrated knife and hollow out the center of the loaf leaving about 1cm of bread around the edge. Set aside.
Heat the oil in a medium sized frying pan and add the onion and bacon.
Cook for 5min or until the bacon starts to color and the onion has softened.
Remove from the heat and add the chives and the cream.
Stir into the mix until combined then add the crab meat, cream, sour cream and 1 ½ cups of cheese.
Mix thoroughly and season with sea salt and cracked black pepper.
Spoon theMix into the loaf and place onto a lined baking tray with the lid and torn chunks of loaf.
Sprinkle over remaining Cheese over the cob and bake for 20min.
Serve warm with the toasted bread chunks.
