Prawn, Watermelon and Feta Salad (4 serves)
350 g | ‘Fresca’ Cooked and Peeled prawns, thawed and drained |
400g | Watermelon, cut into 2cm chunks |
100g | Smooth or Danish Feta |
5 | Mint Leaves, finely chopped |
4Tbsp | French Style Dressing |
2Tbsp | Extra Virgin Olive Oil Pepper to season |
let’s get cooking
- Place the prawns, watermelon and mint into a large bowl.
- Spoon over the dressing and olive oil then season with pepper.
- Crumble over the feta and serve chilled.
